Glasierte Bio-Kalbshaxe Gremolata

Zutaten für 4 Personen
• ca. 800 g Bio-Kalbshaxen von Stotzen, portioniert
• Bio-Salz, Bio-Pfeffer
• wenig Bio-Weissmehl
• wenig Bio-Erdnussöl
• ca. 50 g Bio-Zwiebeln
• wenig Bio-Knoblauch
• ca. 50g Bio-Karotten
• ca. 50 Bio-Sellerie
• etwas Bio-Lauch
• 20 g Bio-Tomatenpüree
• Bio-Salbei und Bio Origano
• ½ dl Bio-Weisswein
• 5 dl Brauner Bio-Kalbsfond
• 1 Stück Bio-Tomate
Garnitur
• 1 Stück Bio-Knoblauch
• 1 Stück Bio-Zitrone
• wenig Bio-Petersilie

Vorbereitung
Zwiebeln und Knoblauch schälen und fein hacken
Karotten, Sellerie und Lauch rüsten und in kleine Würfel schneiden
Tomaten blanchieren, schälen und entkernen. Das Fruchtfleisch in kleine Würfel schneiden
Knoblauch, Zitronenschale und Petersilie für die Garnitur fein hacken

Zubereitung
Kalbshaxen würzen und leicht mit Mehl bestäuben. In einem flachen Topf in heissem Öl
anbraten.
Fleisch herausnehmen und das überschüssige Öl abgiessen.
Zwiebeln und geschnittenes Gemüse beigeben und andünsten
Tomatenpüree beigeben und kurz anrösten, Knoblauch und das Fleisch dazugeben
Mit Weisswein ablöschen und einkochen lassen
Mit dem Kalbsfond auffüllen bis das Fleisch knapp bedeckt ist
Kräuter dazu geben
Zugedeckt im Ofen unter zeitweisem Wenden weischschmoren
Gegen Ende der Garzeit die geschnittenen Tomaten beifügen
Sauce evt. separat auf die gewünschte Dicke einkochen lassen
Die Kalbshaxen anrichten und mit der Sauce nappieren und mit Cremolata bestreuen

Glazed knuckle of organic veal gremolata

Ingredients for four servings
• approx. 800 g organic veal knuckle from the rump, portioned
• organic salt and pepper
• little organic white flour
• little organic peanut oil
• approx. 50 g organic onions
• little organic garlic
• approx. 50g organic carrots
• ca. 50 g organic celery
• little organic leek
• 20 g organic tomato purée
• organic sage, organic oregano
• ½ dl organic white wine
• 5 dl brown organic veal stock
• 1 organic tomato
Garnish
• 1 clove of organic garlic
• zest of 1 organic lemon
• little organic parsley

Preparation
Peel the onion and garlic and chop them finely
Peel and finely dice the carrots, celery and leek
Blanch the tomatoes, peel them and remove the seeds
Finely dice the flesh of the tomato
Finely chop the garlic, lemon zest and parsley for the garnish

Season the veal and lightly dust with flour
Fry in a frying pan in hot oil
Remove the meat and pour off excess oil
Add the onions and chopped vegetables and continue to fry
Add the tomato purée and lightly cook, add the garlic and meat
Deglaze the pan with white wine and reduce down
Pour on enough veal stock, so as just to cover the meat
Season with herbs
Cover and leave to braise in the oven, turning occasionally
When it is nearly cooked, add the diced tomatoes
According to taste, leave the sauce to simmer separately until it reaches the desired thickness
Arrange the veal on a plate, pour over the sauce and decorate with the gremolata
